Professional Cooking

Professional Cooking

The Professional Cooking program prepares students to practise the trade of professional cook.

Generally speaking, professional cooks perform tasks related to preparing, transforming, serving and storing food. They are employed in restaurants, hotels, hospitals and other health care institutions, central food commissaries, educational institutions and other establishments. They can also work on ships, construction sites, for caterers, food production facilities, etc. They sometimes work under the authority of a chef. 

The duration of the program is 1 470 hours, which includes 930 hours spent on the specific competencies required to practise the trade or occupation and 540 hours on general, work-related competencies. The program of study is divided into 24 competencies which vary in length from 30 to 135 hours. The total hours allocated to the program include time devoted to teaching, evaluation of learning and enrichment or remedial activities.

Contemporary Professional Pastry Making

Contemporary Professional Pastry Making

The Contemporary Professional Pastry Making program aims to train people in the pastry profession. This program is geared towards chefs that work in restaurants where part of their tasks are in pastry making.

Pastry makers are multi-skilled and specialize in creating pastries as well as chef-related tasks. In general, they create a variety of pastries, creams, biscuits, cookies, petits fours, small cakes, traditional and contemporary entremets, frozen desserts, chocolate products, pastry decorations as well as plated desserts. Occasionally pastry chefs may be called upon to make other products such as various breads, brioches, and doughnuts. Pastry makers work mostly in hotels and restaurants. They may also work in food stores, cafeterias, catering or in bakeries.

Legal Secretarial Studies

Legal Secretarial Studies

The AVS program, Secretarial Studies-Legal, is designed to train students to exercise the occupation of legal secretary. The principal functions of a legal secretary are to prepare the documents required by lawyers, notaries or other persons in the legal field in their professional activities. Also, legal secretaries often act as assistants to their superiors. They are also called upon to carry out general secretarial tasks which are covered in the program leading to a DVS (Diploma of Vocational Studies) in Secretarial Studies. 

Most legal secretaries work for law firms or notaries, while others work for the legal departments of large companies, for municipalities, for the federal or provincial government or for trustees or bailiffs. 

Legal secretaries must be very productive and able to work under pressure, given the importance of time limits and the urgency of certain files. As legal secretaries are often in contact with clients, they must be very good at communicating and establishing interpersonal relationships. As assistants, they are required to observe professional ethics, especially in their general conduct and as regards confidentiality. 

The AVS program, Secretarial Studies-Legal, helps students develop the skills required to exercise the occupation and to master the competencies needed in the workplace in a legal environment. This training takes into account all the competencies included in the DVS in Secretarial Studies. In the interest of continuity and harmonization, the Secretarial Studies-Legal program favors the acquisition of competencies secretary.

Starting a Business

Travel Consulting & Sales

Travel Consulting & Sales

The Travel Consulting and Sales program aims to train travel sales consultants. The job consists of interacting with customers, determining needs and expectations and describing travel offers and the agencies' services. The consultant will be able to offer information on destinations, modes of travel, lodging and the costs associated all with the goal of selling travel products and services. The consultant will perform administrative tasks such as reservations, billing as well as coordinating payment for products purchased and prepare travel documents. Excellent customer service skills are expected. 

The consultant will be expected to sell travel packages as well as customized travel products (such as sun, cultural, health, adventure, sports, ecological, etc. destinations), cruises, business and tourist plans. He or she will also offer transportation and lodging packages, and travel insurance. The range of travel products and services proposed by agencies is forever evolving. 

The role of the travel consultant also consists of informing the client on travel conditions such as requirements to enter and exit a country, foreign currency and exchange rates, traveller security, etc.

Professional Sales

Professional Sales

The Professional Sales program prepares students to practise the occupation of retail sales consultant. 

Sales consultants work in retail establishments, selling a range of products and services, such as furniture, household appliances, electronic equipment, clothing, horticultural products and automobiles. They work directly with consumers to determine their needs and provide appropriate advice regarding the products and services that may meet these needs. 

The aim of a sales consultant’s work is therefore not just to sell products or services, but to offer solutionsthat correspond to their customers’ needs, to provide advice, establish a climate of trust and build customer loyalty by offering personalized service that meets customer expectations. In addition to consulting and sales-related tasks, sales consultants may also manage and display in-store merchandise and provide after-sales service. 

Sales consultants are employed in various types of retail establishments such as chain stores, specialty stores, department stores, independent and discount stores, and big-box stores. They generally work 35 to 40 hours a week on a full-time basis, and 15 to 20 hours a week on a part-time basis. However, their working hours may increase considerably during peak seasons.
